Watermelon Cucumber Salad with Honey Balsamic Vinaigrette

Watermelon Cucumber Salad

Ingredients:

  • 3 cups cubed watermelon
  • 3 cups cubed cucumber, peeled
  • 1 1/2 tbsp snipped cilantro
  • Zest from 1 orange

Method:

Place watermelon and cucumber in a large bowl, toss with cilantro and orange zest.

Honey Balsamic Vinaigrette

Ingredients:

  • 2 tbsp Orange Blossom Honey Balsamic Vinegar or White Balsamic Vinegar
  • 1 tbsp fresh lime juice
  • 1 tbsp superfine sugar

Method:

In a small bowl, whisk together vinegar, sugar, and lime juice. Mix until sugar is dissolved.

Drizzle over melon cucumber mixture and toss to coat.

Serves 4
