Smoky Mango Barbecue Ribs

Mango Sauce for Ribs

Ingredients:

  • 1 1/2 cups pureed mango (about 3 medium sized mangos
  • 1/2 cup tomato ketchup
  • 1/3 cup brown sugar firmly packed
  • 2 tsp rice vinegar
  • 2 tsp stone ground mustard
  • Juice of 1 orange
  • Juice of 1 lime
  • 1 tsp chili sauce
  • 1 1/2 tsp liquid smoke
  • 1/8 tsp ground coriander
  • 1/8 tsp cumin

Method:

Combine all ingredients in a medium sized saucepan. Bring to a simmer over medium low heat stirring occasionally for 20-25 minutes or until thick and reduced.

Spice Rub

Ingredients:

  • 1/4 cup brown sugar
  • 1 tbsp paprika
  • 1/2 tsp garlic powder
  • 1 1/2 tsp chili powder
  • 1 tsp sea salt
  • 1 tsp coarse ground pepper

Method:

In a small bowl mix all ingredients together. Set aside.

Smoky Mango Barbecue Ribs

Ingredients:

  • 2 1/2 to 3 pounds country style pork ribs
  • Spice Rub
  • Mango Sauce

Method:

Heat oven or grill to 250 degrees. Cover baking sheet with aluminum foil and place rack on top. Spray lightly with non stick spray.

Coat ribs in spice rub and place on the rack and cook for 2 1/2 hours . During the last 1/2 hour brush ribs with Mango Sauce. Baste ribs with additional sauce to serve.
