Pear and Apricot Salad

Pear and Apricot Salad


  • 2 handfuls mixed spring greens
  • 1 asian pear, julienned
  • ½ fennel bulb, shaved thin
  • 6 dried apricots, sliced thin
  • 2 T. goat cheese
  • 3 chives or green onions, sliced thin


Place a small handful of greens on each plate. Top with pear, fennel, apricots, goat cheese and chives. Dress the salad with a Citrus Vinaigrette and enjoy! Serves 4.
