Mix up your Thanksgiving dessert! Pie trifle is the newest way to serve it up

You can mix and match the flavors with this pie trifle!

Either you love pie, or you don’t. But there is one dessert both parties will come together on – pie trifles! Spoon in layers of pie crust, filling, and cream for a unique dessert that will take the treat table by storm.

Wendy Paul shares how to stack up this twist on Thanksgiving pies. You don’t even have to limit yourself to one flavor! Mix and match for some tasty combos. And if you’re still a pie purist, use the leftovers to make a second day dessert.

Thanksgiving Pie Trifle

Ingredients

  • Pumpkin pie
  • Apple Pie
  • 1 pint heavy cream
  • 1/4 cup brown sugar
  • 1 tbsp. vanilla paste
  • Pinch of cinnamon
  • Maple Bourbon syrup glaze (optional)
  • 1 recipe Pie Crust Cookies (below)

Instructions

Whip the heavy cream, brown sugar, pinch of cinnamon until stiff peaks form. Set aside.

Make the pie crust cookies. (below)

Using trifle cups or 9 oz. plastic clear cups assemble your pie trifles.

Layer 2 scoops of pumpkin pie, some brown sugar cream, drizzle of maple bourbon syrup, then 2 scoops of apple pie, brown sugar cream, drizzle of maple bourbon syrup. Then top with more brown sugar cream and a pie crust cookie or crumble (recipe below).

 

Pie Crust Cookies

Ingredients

  • 1 pkg. refrigerated pie crust
  • 1/4 cup sugar plus 1 tsp. cinnamon
  • 1 egg

Instructions

Preheat your oven to 400 degrees.

Unwrap the pie crust. Place one pie crust on a lightly floured surface. With a pizza cutter or sharp knife, cut 8-9 equal strips lengthwise. Set aside. Place the remaining pie crust on the counter. Then start to make your lattice. Just remember over- under. Place 1/2 the strips of pie crust on top of the whole one. Then place the remaining pie crust strips the opposite way, lifting and tucking the crust over under until you get your desired pattern. It’s quite easy.

Using a 3″ round cookie cutter, cut 9 rounds. Place the rounds on a lightly greased baking sheet. The whisk one egg and brush an egg wash onto each round.

Sprinkle with the sugar and cinnamon mixture. Bake for 10-12 minutes until golden and crispy. Cool.

*TIP: with the remnants of crust after cutting out the rounds, chop roughly and place on the end of the cookie sheet. Dust with the sugar cinnamon mixture and bake right along side the cookies. This will give you a nice crust crumble to use for your recipe as well.
