1/2 pound lean ground beef
1/2 onion, chopped fine
2/3 cup milk
2 1/2 cups biscuit mix*
1 cup cheddar cheese, shredded**
1/2 cup Asiago cheese, shredded**
1/4 cup Parmesan cheese, shredded
1/2 cup ketchup
1/8 teaspoon garlic powder
Preheat oven to 400 F. Brown beef with chopped onion until meat is no longer pink. Drain well.
Beat together eggs, milk and mustard. Stir in biscuit mix, beef, cheddar and Asiago cheeses. Fill greased muffin tins or paper lined muffin tins 3/4 full with batter. Sprinkle Parmesan cheese over tops. Bake at 400 F for 15-18 minutes or until a toothpick inserted in center comes out clean.
Combine ketchup and garlic powder and use as a dipping sauce.
Notes: * May substitute 2 cups flour, 1/4 cup sugar, 3 teaspoons baking powder, 1 teaspoon salt and 1/4 cup butter for biscuit mix. Combine all ingredients and mix well, or until no visible lumps of butter remain. A pastry blender or a fork works well for this.
** May substitute 2 cups sharp cheddar for the cheddar and Asiago.
