If you have extra funfetti cake mix, don’t let it go to waste—turn it into cake pops! Simply bake the cake according to package directions, then dump it into your stand mixer while it’s still warm. No need for extra frosting—it’ll be perfectly moist on its own. Skewer each portion with a cake pop stick, dip in white chocolate, and finish with a sprinkle of, well, sprinkles!

 

Funfetti Sandwich Cookies

Prep Time: 10 minutes
Cook Time: 10 minutes
Additional Time: 20 minutes
Total Time: 40 minutes

INGREDIENTS

  • 1/2 cup butter, room temperature
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 11/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoon cornstarch
  • 1/2 teaspoon salt
  • 1/2 cup rainbow sprinkles – (or colors of your choice)

Cake Batter Buttercream

  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 1/2 cup boxed Funfetti dry cake batter
  • 1 Tablespoon cream cheese
  • 1-2 Tablespoons whole milk

METHOD

  1. Preheat oven to 350.
  2. In a mixing bowl or stand mixer, beat the butter and sugar until light and fluffy. Add the egg, vanilla, and almond extract, and beat until smooth.
  3. Add flour, baking powder, baking soda, corn starch, and salt and mix slowly until the dough begins to come together.
  4. Add the rainbow sprinkles and stir again until just combined.
  5. Portion and roll the dough onto a prepared baking sheet. Bake for 10-11 minutes, until the edges and bottoms are golden but the center is slightly soft. Allow the cookies to cool completely.
  6. Prepare the cake batter buttercream by beating together all the ingredients until light, fluffy, and smooth.
  7. Applying the desired amount of frosting to the bottom of one cookie using a small offset icing knife and spoon, or a small cookie dough scoop or piping bag with a piping tip of choice.
  8. Apply the bottom of another cookie to the frosted side of the first cookie. Gently press together. If desired, press the sides into additional rainbow sprinkles. Enjoy!

 

Easy Cake Pops

Prep Time: 30 minutes
Cook Time: 30 minutes
Total Time: 1 hour

INGREDIENTS

  • 1 funfetti cake mix + ingredients on the back
  • 12 oz white chocolate candy melts
  • 24 lollipop sticks
  • Rainbow sprinkles

METHOD

  1. Prepare and bake the cake mix according to the boxed directions.
  2. Immediately after taking the cake out of the oven, pour the hot cake into the bowl of a stand mixer. Using the paddle attachment, mix at low speed until dough forms that can be pressed together into a ball.
  3. Portion out the dough and roll into a ball.
  4. Place the cake balls on a cookie sheet and then into the freezer to chill while melting the chocolate.
  5. Once the chocolate is melted, remove the cake balls from the freezer.
  6. Dip each lollipop stick into the chocolate and press it into the center of each cake ball. This will help prevent the cake pop from falling off the stick.
  7. You are ready to dip once the chocolate is set on the sticks. Dip the cake pops one by one in the chocolate and gently shake the cake pop to remove any excess melted chocolate. Tip the cake pops right side up and add sprinkles, if desired.
  8. Allow the chocolate to set while the cake pop is right side up. If desired, poke holes into a cardboard box to help the cake pops stand up straight and dry.
  9. Serve as is or package up individually in bags with ribbon if desired. Enjoy!
