These leprechaun parfaits make a fun St. Patrick’s Day dessert!

You might dye your milk green or indulge in a big bowl of Lucky Charms for dinner, but we’ve got an even sweeter way to bring some luck into your day: leprechaun rainbow parfaits! These colorful parfaits are layered with every hue of the rainbow and loaded with a touch of magic. They’re easy enough to whip up with the kids or grandkids and are guaranteed to earn you some cool mom points.

Megan Faulkner Brown, the owner of Sweet Tooth Fairy Bakeries, shared her delightful recipes for both a breakfast and a dessert version of these parfaits.

But don’t let the fun stop on St. Patrick’s Day! These parfaits are perfect for any special occasion, like birthday breakfasts or just a fun treat.

 

Breakfast Rainbow Leprechaun Parfait

INGREDIENTS

  • Yogurt of choice (colored, like strawberry or peach)
  • Fruity Pebbles Cereal
  • Fruit of choice (pineapple, strawberries, bananas, mango, blueberries, etc.)

METHOD

  1. In a tall, clear glass, layer yogurt.
  2. Sprinkle on a layer of Fruity Pebbles cereal.
  3. Continue alternating layers until your glass is filled.
  4. Top with fruit of choice and serve.

 

Dessert Rainbow Leprechaun Parfait

INGREDIENTS

For the Pudding

  • 1 5 oz. Instant Vanilla Pudding Pack
  • 2 cups milk
  • 1 can sweetened condensed milk
  • 1 8 ounce tub Cool Whip, thawed

Parfait Toppings

  • Lucky Charms Marshmallows (or Lucky Charms cereal)
  • Nilla Wafers (broken up)
  • Cool Whip
  • Bananas (sliced)

METHOD

  1. Mix pudding, milk, and sweetened condensed milk together and store in fridge for about an hour to chill.
  2. To a tall glass, spoon a layer of pudding.
  3. Add a layer of crushed Nilla Wafers.
  4. Then, add a layer of sliced bananas.
  5. Smooth a layer of Cool Whip on top.
  6. Top with Lucky Charms Marshmallows and serve.
