This is breakfast at it’s best! Hootenanny is a puffy oven-baked pancake. It’s light and lofty and loaded with protein, too! Think of it as a cross between a German pancake and a moist and fluffy cake.

What is Hootenanny?

Hootenanny is similar in spirit to a German pancake (sometimes called a Dutch baby), but with its own twist: it gets an extra boost of moisture and protein from plain Greek yogurt. That yogurt doesn’t just up the nutrition—it gives the pancake a dreamy, tender texture.

Here’s the best part: it’s adaptable! You can make it with regular flour, whole wheat, or swap in your favorite gluten-free flour blend without sacrificing flavor or texture.

The secret to the protein punch in this recipe is the plain Greek yogurt. It adds creamy richness, balances the sweetness, and delivers a hefty dose of protein to keep you feeling full and satisfied.

 

High-Protein Hootenanny

INGREDIENTS

  • 6 eggs
  • 2 ¼ cups plain Greek yogurt
  • 1 tablespoon vanilla extract
  • 1 tablespoon real maple syrup
  • 1 cup flour (white, wheat, or gluten-free)
  • 1 tablespoon baking powder
  • 2–3 cups mixed berries (blueberries, strawberries, raspberries, blackberries)

METHOD

  1. Preheat your oven to 375°F.
  2. In a large mixing bowl, whisk together the eggs, yogurt, vanilla, and maple syrup until smooth.
  3. Add the flour and baking powder, and whisk again until the batter is well blended.
  4. Pour the batter into a greased 9×13-inch baking dish (or similar size).
  5. Sprinkle the berries evenly over the top of the batter.
  6. Bake for about 45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool for about 10 minutes before serving.

Serving Suggestions

Once it’s cooled slightly, slice it up and serve warm with a drizzle of maple syrup and a dollop of whipped cream.
