Apple Coffee Cake


4 cups apples, peeled and chopped or thinly sliced
2 1/2 cups grated cheese
2 cans (12 oz) refrigerator biscuits
2/3 cup chopped nuts, walnuts or pecans
2/3 cup brown sugar
1/2 teaspoon apple pie spice*
1/3 cup pancake syrup **
1/2 teaspoon maple flavoring **
1 egg

Peel, core, and chop or thinly slice apples. Spray a 9×13 pan with non-stick spray. Evenly spread half the apples in the bottom of pan. Sprinkle with 1/2 the cheese. Cut each biscuit into fourths. Arrange biscuits over apple and cheese mixture – turn points up. Top with remaining apples, cheese, and the chopped nuts.

In a small mixing bowl combine sugar, spice, syrup, flavoring, and egg. Mix well. Drizzle mixture evenly over apples and cheese. Bake at 350 degrees for 35-45 minutes, or until nicely browned. Cool 10 minutes before serving. Drizzle with glaze below.
GLAZE
1 package (8 oz.) cream cheese
1/2 cup powder sugar (confectioners’ sugar)
1/4 teaspoon maple flavoring (optional)
2-4 tablespoons milk

Soften cream cheese, stir in sugar and flavoring. Thin with a little milk to make a drizzle consistency. Drizzle glaze over warm coffee cake.

NOTES:

* Apple pie spice may be substituted with 1/4 teaspoon cinnamon and 1/4 teaspoon nutmeg.

** Pancake syrup and maple flavoring may be substituted with 1/3 cup pure maple syrup. (If maple flavor is not available, eliminate it from recipe.)
