Autumn Pear and Pumpkin Soup
1/3 cup Chopped Onion
1 cup Chicken Broth
1 16 oz. Can Pumpkin
½ cup Light Cream
½ cup Whole Milk
1 ¾ cup Pear Nectar
¼ tsp. Ground Ginger
Pear Slices
Combine onion and chicken broth; bring to a boil and cook until onions are tender.
Transfer into a blender and add pumpkin. Blend until smooth.
Return mixture to the sauce pan. Stir in milk, cream pear nectar and ginger.
Cook until heated through.
Ladle into soup bowls and garnish with pear slices.
Makes 4-6 servings
Parmesan Croutons
Country or Artisan Bread
Olive Oil
Shaved Parmesan cheese
Lightly brush bread with olive oil, sprinkle with parmesan cheese.
Place under broiler until golden brown; (2-3 minutes)
