½ cup tightly packed spinach leaves, chopped
¼ cup frozen defrosted corn with a pinch of salt
2 tbsp. gorgonzola, blue, or stealth cheese
½ cup red cabbage, finely chopped
2 tsp. pinenuts, chopped
2 tbsp extra virgin olive oil
½ red pepper, finely diced
¼ cup celery, chopped
1 tbsp. red wine vinegar
Salt and pepper to taste
Combine all ingredients five minutes before serving. Serves 2.
