BBQ Beef Sandwiches and Fresh Lemonade

BBQ Beef Sandwiches
1-1/2 pot roast
Broth from pot roast
2 onions, chopped
Salt & pepper to taste
8 hamburger buns or sandwich rolls

BBQ Sauce
1 c. catsup
1 c. water
3 T. vinegar
2 T. soy sauce
2 T. Worcestershire sauce
2 T. chili sauce
1 T. salt
1 t. paprika
½ t. pepper
Dash cinnamon, ground cloves & garlic salt

Simmer pot roast in water until tender (about 2-1/2 hours). Saving broth, remove meat. Skim fat off broth; discard. Pull meat apart with fork. Return to broth. Add onions, catsup, water, vinegar, soy sauce, Worcestershire sauce, chili sauce, salt, paprika, pepper, cinnamon, cloves, and garlic salt. Simmer for 3 hours. Serve over opened buns or rolls. Serve with Fresh Lemonade and a fruit salad. Yield: 7-8 servings.
Fresh Lemonade
2 c. fresh squeezed lemon juice
4 c. sugar
2 c. water
6 lemon rinds, pared in strips
2 to 3 bottles club soda
Fresh mint


Squeeze lemons to get 2 cups juice. Set aside. Dissolve sugar in water over low heat. Add lemon rind; bring to a boil. Simmer 5 minutes. Cool. Add lemon juice. Cover and refrigerate. To serve, strain and dilute with club soda to desired taste. Garnish with mint leaves.
