Blackened Halibut Salad with Lime Chipotle dressing

Blackening Spice Rub
4tsp Cumin
4tsp Red Cayenne Pepper
4tsp Garlic Powder
4tsp Mexican Oregano Leaves
1tsp Black Pepper


In a small bowl, stir all ingredients together mixing well. Set aside.
* Spice mixture will keep indefinitely in an air tight container.

Lime Chipotle Dressing
1/2 cup sour cream
1/2 cup mayonnaise
1 1/2 tsp chipotle pepper in adobe sauce chopped
3/4 tsp spice rub
2 tbsp finely cilantro leaves
Juice of 1 lime


Place all ingredients in a food processor or blender and mix until smooth.
Blackened Halibut
4 6oz Halibut Fillets
Blackened spice rub
1tlb olive oil
Juice of 1 lime
Salt


In a medium skillet, heat the oil over medium high heat. While the oil is heating, place desired amount of spice rub in a shallow pan. Evenly coat fish. Place fish in heated skillet and cook 3 to 4 minutes. Turn and cook an additional 3 to 4 minutes or until fish is cooked through and flakes easily with a fork. Squeeze fresh lime juice evenly over the fish.

Avocado, Orange, and Jicama Salad
4 cups mixed salad leaves, torn
2 navel oranges, skins removed and sliced into segments
1 cup thinly sliced jicama
1 avocado thinly sliced

To Assemble Salad:

Divide lettuce evenly among 4 plates. Top with jicama, orange segments, and avocado. Place halibut on top and garnish with fresh cilantro and lime wedge. Serve with Lime Chipotle Dressing.
