The cook shouldn’t miss out on the fun! Try this easy, make-ahead
menu on your family’s next camping trip.
Inside – Out Pizza
2 Round Pita breads
½ c. to ¾ C Pizza Sauce
2 c. shredded mozzarella cheese
Toppings of your choice: Pepperoni, olives, mushrooms, etc.
Cut each pita bread in half, making 4 half circles. Spread pizza sauce evenly inside each
pita. Add ½ cup mozzarella cheese into each pita. Add in toppings of your choice.
Secure top of pita together with toothpick and wrap pita in tinfoil. Place on hot coals and
cook 2 to 3 minutes on each side, or until the cheese is melted.
1 lb. chicken breast
1 large sweet onion
2 large green bell peppers
2 c. shredded cheddar cheese
Sour Cream (optional)
Cube chicken breast, onion and bell pepper. Assemble kabobs by adding all the chicken
to one skewer, all the onion to another and the bell pepper on its own skewer. Not
incorporating all of them onto one skewer insures proper cooking times. Place skewers
in a Ziploc bag and sprinkle in fajita seasoning. Refrigerate until ready to use.
Grill chicken, onion and pepper skewers over medium-high heat until cooked through.
To prepare quesadilla lay tortilla on one piece of tinfoil. Sprinkle ½ cup of cheese over
half of the tortilla and top with cooked chicken, onion and pepper. Fold tortilla over and
wrap tinfoil around. Lay foil in hot coals and cook 1 ½ to 2 minutes per side or until
cheese is melted.
Top with Guacamole, Sour Cream and Salsa if desired.
Sweet Summery Snackwich
4 Croissants, sliced open
½ c. Nutella
Sliced strawberries and bananas
Spread equal amounts of Nutella on the inside of croissants. Lay sliced strawberries and
bananas on Nutella and top with other half of croissant. Wrap in tinfoil and place on hot
coals for 1 to 2 minutes per side.
Remove from coals and enjoy!
