Caputo’s Almost Instant Chili


1 T olive oil
2 onions, chopped
4 cloves garlic, chopped
1- 1 1/2 lb ground meat (beef, pork, turkey, anywork well)
8 oz. bacon, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
4 stalks celery, sliced
1 T ground cumin
1/4 cup chili powder
1 T oregano
salt and pepper to taste
1 28 oz. can diced tomatoes
1 28 oz. can diced green chiles
1 7 oz. can diced jalepenos
1 14 oz. can black beans, drained
1 14 oz. can pinto beans, drained
1 14 oz. can kidney beans, drained
1 14 oz. can corn, drained
2 T cilantro, chopped
8 oz. shredded cheese
tortilla chips
2 limes, cut into wedges


Heat the olive oil in a large skillet or soup pot. Add the onions and garlic and cook over medium heat until transparent, about 5 minutes. Remove the onions and garlic from pot and reserve. Turn up the heat and add the ground meat and chopped bacon, cook until browned. Add the reserved onions and garlic and all other ingredients except tortilla chips, shredded cheese and lime wedges. Cook over medium heat for about 30 minutes. Serve in individual bowls topped with shredded cheese, a few tortilla chips and lime wedges.
