Caputo’s Calypso Salsa


1 cup pineapple, diced
1 cup orange sections, diced
1 cup jicama, diced
1/2 cup red onion, diced
1/2 cup red bell pepper, diced
1 jalapeno pepper, minced
1/4 cup lime juice, freshly squeezed
1 t fresh ginger root, minced
1 T fresh mint, minced
1 T honey


Combine all of the ingredients in a medium sized, non-reactive bowl, cover and refrigerate for several hours before serving.
