Caputo’s Psari Marinata (Marinated Fish)

Caputo’s Psari Marinata
3 lbs. Fish Fillets, preferably sea bass
½ cup Vinegar
3 Cloves Garlic, chopped
1t. Rosemary Leaves
1 Bay Leaf
Salt
Fresh Lemon Juice
Flour for frying
Oil for frying


Cut the washed fillets into serving sized pieces, sprinkle with the salt and lemon juice and let stand for about 15 min. Meanwhile, heat the oil in a large skillet over medium heat. Roll the fish in the flour shaking off any excess, and fry in the hot oil until golden brown on both sides. Remove to a deep platter.

When all the fish is fried, strain the oil of any burned flour. Return the oil to the pan, add garlic and very lightly brown. Add the remaining ingredients and bring to a boil. Remove from heat and quickly pour over the fish. Serve hot or allow fish to cook in the refrigerator and serving cold. Will keep 4 to 5 days.
