1 red bell pepper, roasted, halved, seeded, peeled & chopped
2 scallions (white part only), chopped
Pinch cayenne pepper
1 Tbsp. extra virgin olive oil for cheese spread
1/4 tsp. salt
1/2 lb. Robiola, Palhais or brie cheese
12 slices country bread
1/4 cup extra virgin olive oil, for brushing on bread
Place the raosted pepper, scallions, cayenne pepper, sweet paprika, lemon juice and 2 tablesppons of the olive oil with the salt in a food procesor. Process until a smooth paste. Add the cheese and process again until smooth. Turn into a bowl and refrigerate for 2 to 12 hours.
When you are ready to use, preheat the broiler or grill, brush the bread on both sides with the olive oil and place on grill. Toast until it is as dark as you like. Remove from grill, spread the cheese spread on the toast and serve.
