Cedar Plank Salmon with Honey Mustard Glaze


1 cedar plank that will fit in your barbecue with the lid down
salt and pepper to taste
1 tablespoon olive oil
water, enough to cover cedar plank
1/2 cup apple cider
2 six ounce salmon filets
2 tablespoons whole grain mustard
1 teaspoon fresh parsley, chopped
1 teaspoon fresh basil, chopped
1 teaspoon shallots, fine chopped
1 tablespoon honey


Adding the apple cider to the water, soak the cedar plank for one hour in enough water to cover the plank completely. Remove the plank from the water, let air dry and brush with the olive oil.

Combine the mustard, parsley, basil, shallots and honey and mix well.

Season salmon filets with salt and pepper to taste. Place on the cedar plank on the grill and salmon filets on top of the plank. Close the top and cook over medium high heat for three minutes. Brush salmon filets with the mustard mix and repeat every three minutes until salmon is cooked through (this can take from 10 – 15 minutes, depending on the thickness of the salmon filets and the thickness of the cedar plank).
