15 cleaned, whole tomatillos
3 red or green jalapenos, tops cut off
1 tablespoon salt
3/4 cup water
1/4 cup fresh cilantro
Place all of the above in a blender and mix for 30 seconds. Chill for 1
hour before serving.
10″ flour tortillas
3/4 cup shredded Monterey Jack cheese
3/4 cup shredded cheddar cheese
1 teaspoon oil
Place oil in a frying pan over medium heat, and heat until hot, but not
smoking. Place tortilla in oil, sprinkle cheese m ixture on top. Cook
until cheese is melted. Remove from pan and fold in half.
