Here’s how to do grilled chicken right.

Burgers and dogs may be the go-to of the grilling world, but nothing speaks to true grilling power like perfectly grilled chicken. We’re talking juicy, tender meat that’s kissed with grill marks and turned a delicious caramel-colored hue.

According to Chef Todd Leonard, grilled chicken is an essential in every kitchen. He broke down the basics to help you make grilled chicken worthy of a chef’s kiss.

 

Why Chicken Thighs Deserve the Spotlight

Chef Todd emphasized starting with the right cut. While chicken breast is popular, thighs often deliver more flavor thanks to their higher fat content and natural juiciness. If you do go with breasts, butterfly them for faster, more even cooking. “Take a mallet and pound them out until they’re thinner,” said Chef Todd. “That helps the meat cook evenly and prevents drying out.”

The Power of Marinade

A great marinade has three things: seasoning, acidity, and fat. These components bring flavor, help tenderize the meat, and keep it from sticking to the grill. “Think of it like putting suntan lotion on before going to the desert,” Chef Todd explained. “The grill is hot and dry—it’s hard on meat. A little oil will protect it and help with caramelization.”

Season Like You Mean It

Don’t be shy with the seasoning. Salt, pepper, garlic powder, herbs—get bold. Your marinade or dry rub should amplify the natural flavor of the chicken, not mask it.

Perfect Grilling Technique

When it’s time to grill:

  1. Preheat the grill on high—you want it screaming hot to create those beautiful grill marks.
  2. Once the chicken hits the grill, reduce the heat to medium. This ensures the inside cooks evenly while the outside gets that nice char.
  3. Flip only once or twice to preserve the juices.

Always remember: internal temperature matters. Aim for 165°F for safely cooked poultry.
