Chocolate Cookie Truffles
1 package (8 oz) cream cheese, softened
1 package (1 lb. 2 oz) Oreos (or other sandwich cookies)
good quality almond bark, dipping chocolate, or chocolate chips
Crush Oreos (in a food processor, or by hand) t fine crumbs. Using a mixer, combine the crumbs with the cream cheese. After Chilling for 15 minutes, mold the dough into 1-inch balls and place them on a wax-lined cookie sheet.
Melt the chocolate in a medium bowl. One by one dip the balls of dough into the melted chocolate, then lift them out with a fork or slotted spoon, allowing the excess chocolate to drip back into the bowl. Place the chocolate-covered balls back on the wax paper until the chocolate hardens
