Cinnamon Roasted Sweet Potatoes


Olive oil cooking spray
1½ pounds, peeled, sliced ½-inch thick and halved sweet potatoes or yams
1 tablespoon extra virgin olive oil
2 to 3 cloves garlic pressed or minced
½ teaspoon garlic powder
½ teaspoon salt
½ to ¼ teaspoon cinnamon


Preheat oven to 400. Spray a baking sheet or pan with cooking spray and set aside.

Mix Olive oil and spices together in a bowl and toss together with sweet potatoes.

Spread potatoes evenly over pan. Cover pan or dish and bake for 25 minutes or until potatoes are tender. Remove cover and continue to bake potatoes 5 to 10 minutes stirring occasionally to cook evenly and brown. If potatoes begin to dry out spray lightly with cooking spray. Remove from oven and serve.

Yield 6 servings each at approximately 132 calories; 1.5 grams total fat; 0.2 gram saturated; 0 cholesterol; 28.4 grams total carbohydrate; 3.5 grams dietary fiber; 2.0 grams protein; 193 milligrams sodium.
