Cocoa Rubbed Ribs

Try something new this Memorial day.



Chef Jim Macari with Harmons shares a delicious take on barbecue ribs.
Cocoa Rubbed Ribs
⅓ Cup Cocoa Powder, Unsweetened
½ Cup Brown Sugar
3 Tablespoons Ancho Chili Powder
2 Tablespoons Real Salt
2 Tablespoons Powdered Onion
1 Tablespoon Powdered Garlic
1 Tablespoon Fresh Oregano
1 Tablespoon Dried Mustard
1 Tablespoon Liquid Smoke
2 teaspoon Fresh Ginger
2 teaspoon Ground Cinnamon
1 teaspoon Ground Allspice
As Needed Coca-Cola

Combine all of the above spices and rub on ribs. Marinate for at least 2 hours or at most 48. Heat grill to 375*F. Place ribs on grill and cook, about 40 minutes, turning and flipping as needed. While the ribs are cooking prepare four pieces of tin foil on the side. Make them long enough to hold the ribs, using two pieces on the bottom for each rack make a ‘boat’ shape. Transfer the ribs to the foil after the 40 minutes is up and fill with coca-cola. Cover and pinch closed with another piece of foil. Carefully transfer back to the grill and cook an additional 20 minutes. Serve and enjoy.
