Crock Pot Irish Corn Beef Dinner for St. Patrick’s Day

Crock Pot Irish Corn Beef Dinner
1 corned beef brisket, 3-5 lbs with spice packet
1 large onion, cut into wedges
6-8 red new potatoes
1 lb bag baby carrots
1 head cabbage, thick sliced
1 c gingerale
1-2 c water


Place the onion wedges and new potatoes in the bottom of a 5 quart slow cooker. Combine the gingerale, water and spice packet. Pour over the vegetables. Rinse the corned beef then place it on top of the vegetables. Cover and cook on low 8-10 hours or until meat and vegetables are tender and meat falls apart. Add the baby carrots the last 2 hours of cooking time.

Horseradish-Mustard Sauce for Corned Beef
1 c sour cream
2 T prepared horseradish
2 T prepared mustard
In a small bowl, combine the sour cream, horseradish and mustard. Serve with corned beef.


Crock Pot Tips

Jump start your meal in the microwave or brown your meat and cut your cooking time almost in half. Also, if you start your food on high for 1-2 hours then switch it to low this also cuts your time down. This is a great tip if you think , “I would like something in the Crock Pot for dinner but it is noon.”

For easy clean up spray the Crock Pot with cooking spray.
