2 cups sugar
½ cup water
2 cups fresh lime juice
3 cups fat free half and half
¼ – teaspoon vanilla extract
½ teaspoon grated lime zest – optional
pinch salt – optional
Stirring constantly, cook sugar and water over high heat in a small saucepan until sugar dissolves and mixture reaches a full boil.
2. Remove pan immediately from heat and cool to room temperature. Strain syrup if necessary and refrigerate at least 30 minutes before blending with juice and half and half.
3. In a large bowl blend sugar syrup together with lime juice. Stir in fat free half and half, vanilla extract, lime zest and salt.
4. Transfer mixture to an ice cream maker and freeze according to manufacturer’s instructions.
