Grilled Cheese Bake

Grilled cheese sandwiches and tomato soup go hand in hand.

Grilled Cheese Bake
12 slices ½-inch thick bread
butter, softened
garlic salt and pepper to taste
3 ounces reduced fat cream cheese, softened
1 teaspoon dried basil or Italian seasoning
6 slices Mozzarella or other cheese
1 can (10.75 oz) condensed tomato soup
1 can milk (1 ¼-cups)
1 egg, beaten
seasonings of choice*
1 cup shredded Mozzarella cheese

Preheat oven to 400 degrees.



Lightly butter both sides of each slice of bread, sprinkle with garlic salt and pepper to taste; place on a baking sheet. Toast in oven 5-8 minutes, flipping halfway through baking time.



Reduce oven temperature to 350 degrees. Spray 9×13 pan with non-stick spray.



Mix softened cream cheese with basil or Italian seasoning and spread on 6 slices of toast, top with slice of cheese and second slice of toast. Cut sandwiches in half; arrange in prepared 9×13 pan.



Mix together canned soup, milk, beaten egg and spices of your choice;* evenly pour mixture over sandwiches; sprinkle with half the shredded cheese. Bake 20 minutes; sprinkle with remaining shredded cheese and continue to bake another 10-15 minutes.



Garnish with snipped fresh herbs.



Notes:



Twist on grilled cheese and bread casserole – easy fix for dinner. Serve with green vegetable and fruit of choice.

Soup from a can is fast and ready when you want it – there is no shame in speed on busy nights. But, as always, if you like to control the ingredients make it from scratch! Substitute your favorite tomato soup recipe for the can; load it with protein by using milk in the recipe, creamy with the addition heavy cream.



Experiment with different cheeses; try adding a slice of ham to your sandwich; or boost flavor with your own secret spices (see below).



Seasoning Additions:



Try one or more of the following spices for a great flavor boost (don’t overdo, too many spices may jumble the flavor).



Caramelized onion; 1-3 teaspoons smoked paprika;1-teaspoon red pepper flakes; few drops tabasco sauce (to taste); chopped fresh basil; 1-2 teaspoons dried Italian seasoning; 2-3 sliced chopped crisp cooked bacon.
