Grilled Portabella Mushroom Sandwich


2 portabella mushrooms
2 whole wheat buns
1 large yellow tomato, sliced
1 large red tomato, sliced
4 slices Swiss cheese
3 tablespoons mayonnaise
4 leaves butter-leaf lettuce
2 tablespoons vegetable oil
pinch of salt
pinch of pepper



Lightly oil the mushrooms on both sides in the vegetable oil. Season
with salt and pepper. In a heavy pan over medium heat, or over your
barbecue, place oiled mushrooms and cook for 5 minutes on each side,
turning often. Remove from heat. Place Swiss cheese slices on top of
mushrooms one minute before serving. Garnish whole wheat buns with
mayonnaise, tomatoes and lettuce. Add mushrooms and serve.
