Grown-Up Grilled Cheese

Spicy Cajun Bayou Grilled Cheese – Tracy Preston
2 links andouille sausage (or other spicy, smoked sausage)
8 slices crusty, Italian bread
6 tablespoons pepper jelly
8 slices Pepper Jack cheese
8 slices Muenster cheese
4 tablespoons butter, softened


Slice sausage in half lengthwise and grill. Spread 1/4 the pepper jelly on one slice of bread, add 2 slices Pepper Jack cheese, arrange 1/4 the sausage links on top of cheese, top with 2 slices Muenster cheese. Butter 1 side of a second slice of bread and place on top of sandwich – butter side out. Repeat with remaining sandwiches.

Pre-heat a large skillet or griddle over medium heat. Place sandwich on grill, butter side down, butter top slice of bread. Grill sandwich until golden brown, flip and grill opposite side (about 2-3 minutes per side). Serve immediately.

8 slices cinnamon raisin bread
1/2 cup crunchy peanut butter
4 slices Mozzarella cheese
1 golden delicious apple, thinly sliced
8 slices Cheddar cheese
4 tablespoons butter, softened


Spread 1/4 the peanut butter on 1 slice of bread, top with 1 slice Mozzarella cheese, arrange 1/4 apple slices on top, top with 2 slices of cheddar cheese. Butter 1 side of a second slice of bread and place on top of sandwich – butter side out. Repeat with remaining sandwiches.
