homemade Omega 3 cookies, packed with good-
for-you ingredients.
7 C whole rolled oats
2 1/2 C whole wheat flour
1 Tbsp baking soda
1 Tbsp sea salt
2 C applesauce
1/4 C melted butter
2 C light brown sugar or 1 C agave (or half and half)
2 tsp vanilla
4 large eggs or 2 whole eggs and 4 egg whites (to reduce
fat/cholesterol)
2 C (8oz) dark chocolate, chopped
2 C dried cranberries (1/2 the amount dried cherries are
good also)
1 C chopped walnuts
2 C sliced almonds
1/4 C milled flax seed
Preheat oven 350 degrees.
Coat half sheet pan with cooking spray; set aside.
In a large mixing bowl combine applesauce, melted butter,
sugar or agave, eggs and vanilla; mix to combine.
Add flour, baking soda, and sea salt; mix until 80%
incorporated.
Add oats in three small batches mixing between batches.
Do not over mix.
Add chocolate, cranberries, and nuts; stir to incorporate.
Drop cookies onto prepared pan by the tablespoon or use a
large cookie scoop.
Bake at 350 for 12-15 min or until edges are crispy and
lightly browned.
Store in airtight container.
Dough can be frozen for two months or last one week in the
fridge.
Baked cookies freeze well for up to 2 months.
Makes approx 50 cookies.
* if using only agave, add an additional 1/2 C whole wheat
flour
*Stevia can also replace the brown sugar in equal parts if
desired
