Hearty Three Bean Vegetable Soup
1 Medium Onion- Chopped
1 1/2 cup chopped celery (2 stalks)
2 cups chopped carrots (4 medium)
1 Tablespoon olive oil
1 teaspoon minced garlic
2 teaspoon salt
1/2 teaspoon black pepper
1 cup chopped zucchini (1 medium)
1 (15 oz) can cut green beans
1 (15 oz) can garbanzo beans
1 (15 oz) can kidney beans
1 (28 oz) can diced tomatoes
4 cups beef stock (32 oz carton)
4 cups water
2 teaspoons oregano
1 teaspoon basil
1/2 cup mini star pasta


Heat olive oil and minced garlic in a large soup pan. Add chopped onions, celery, carrots, salt and pepper. Sauté for 3 minutes on high heat, stirring constantly. Open and drain all three beans, add into the soup. Add all other ingredients EXCEPT the star pasta. Bring soup to a boil, then add the star pasta. Cover and simmer soup on low heat for 35 minutes.

Makes 4 quarts soup (16 cups)
