Sweet BBQ Marinade
2 lb Flank Steak or
2 lb Chicken Breast
1/3 cup orange juice
1/3 cup soy sauce
1/3 cup honey
3 Tbsp BBQ seasoning
1 Tbsp vinegar
Cut poultry 3/8 inch thick and 1 inch wide Cut
Beef ¼ inch thick and 1 inch wide
Place meat on cutting board and pat dry with paper towel. With you knife turned side ways, cut through the whole steak making three separate ¼ inch thick steaks. Then cut WITH the GRAIN of the meat into 1 inch wide strips. Cut strips into even pieces in length.
Pour all Marinating ingredients into a large ziplock bag. Close and mix. Add meat and message marinate into meat. Place in refrigerator overnight.
Take out all cooking racks from you oven, and pre heat to 170 degrees. Place a large cookie sheet on the bottom of the oven to catch any drippings. Prop toothpicks between wires of oven rack and “hang” marinated strips over toothpicks. Slide rack into oven, making sure meat is 4-5 inches from the bottom of the oven. Leave oven door slightly ajar, and cook for 9-10 hours.
Remove jerky from oven. Place in plastic bag and refrigerate.
