Hot Wassail and Sweet Apple Pie

Hot Wassail
3 cups sugar
3 sticks whole cinnamon
1 tablespoon whole cloves
2 tablespoon fresh lemon juice
2 cups fresh orange juice (about 6 oranges)


In large pot, combine 5 quarts water, sugar, cinnamon, and cloves. Bring to a boil and then simmer for 10 minutes stirring occasionally. Add lemon and orange juice, stir to combine. Keep warm on the stove or reheat in the microwave.
Sweet Apple Pie
3 pounds apples, peeled, cored, and slice
(1/8 – ¼ inch thickness)
3 tablespoons flour
½ cup sugar
¾ teaspoon cinnamon
¼ teaspoon nutmeg
2 tablespoons lemon juice
2 tablespoons butter, cut into 8 pieces
1 egg plus 1 tablespoon milk for egg wash

Preheat oven to 425 degrees. Toss apples with lemon juice and then flour, sugar, cinnamon, and nutmeg. Pile into prepared crust, top apples with butter pieces. Wisk, together egg and milk. Brush egg wash over rim of crust, place top of crust over apples. Wash top of crust with egg wash and sprinkle with sugar. Bake pie on the bottom rack in oven for 20 minutes, just until crust begins to turn golden. Reduce heat of oven to 350 degrees. Continue baking until crust is deep golden and juices are bubbling, about 45 minutes.
