Lemon Olive Oil Cake


2/3 cup extra-virgin olive oil, plus extra
2 2/3 cups flour, plus extra
1 1/4 cup sugar
2 eggs
2 tsp. Vanilla extract
3 1/2 T baking powder
1 1/2 cups milk
zest of 1 lemon
confectioners’ sugar for dusting


Pre-heat oven 10 375 degrees. Grease and flour a 18×13 inch baking sheet. In a large bowl, whisk the sugar, eggs, vanilla, and baking powder until pale and frothy. Whisk in the milk, olive oil and lemon zest. Stir in the flour until just combined, pour into the prepared pan. Bake for 20-25 minutes, or until a toothpick inserted in the center come out clean. Dust wuth confectioners’ sugar.
