Light & Creamy No-Bake Cheesecake With Strawberry Compote

A no-bake cheesecake is the perfect dessert for Easter.

As the temperatures begin to rise outside, we love to have a few no-bake dessert recipes in our back pocket. This creamy no-bake cheesecake is light, fluffy, and delicious, and requires no baking!

Chelsea Price shares her delicious white chocolate no-bake cheesecake with a roasted strawberry compote. She recommends serving up each slice with additional strawberry compote so there is freshness in every bite.

White Chocolate No Bake Cheesecake

INGREDIENTS

Crust:

  • 1 ¼ c crunched ginger snap cookies
  • 4 TBSP butter
  • 2 TBSP brown sugar
  • 1/8 tsp salt

Filling:

  • 16 oz softened cream cheese
  • ¼ c powdered sugar
  • 4 oz white chocolate, melted
  • ¼ c heavy cream
  • 1/8 tsp salt
  • 1/8 tsp white vinegar
  • 1 tsp vanilla

Whipped Cream:

  • ½ c heavy cream
  • ½ tsp vanilla
  • ¼ c powdered sugar

METHOD

  1. For the cookie crust, start by crushing about 14 cookies till very fine. Then mix all ingredients. It should be a damp sand consistency. Press down firmly in your spring form cake pan. Set in fridge to set.
  2. In a microwave safe bowl, break up the white chocolate into chunks. Cover with ¼ cup heavy cream and melt in microwave in 30 second increments till smooth and melty. Don’t over heat or the chocolate will seize.
  3. In a separate bowl, cream together your cream cheese and powdered sugar till smooth. Add in your white chocolate mixture vanilla, vinegar and salt. Make sure to mix it well.
  4. Fold in ¾ c whipped cream. At this point you have to be sure not to over mix or you’ll lose texture and height. After the whipped cream is incorporated add to your crust. Dollop the top with roasted strawberry compote and swirl into the cheesecake mixture. Let set in fridge for 1 hour or up to one day. When ready to serve dollop with more strawberry compote and enjoy.

 

Roasted Strawberry Compote

INGREDIENTS

  • 8 c or 2 lbs strawberry washed and tops cut off
  • Juice of half a lemon and half a lime
  • Zest of half a lemon
  • 1/2 tsp salt
  • 2/3 c sugar

METHOD

  1. In a 9×13 pan place all ingredients.
  2. Bake at 425 for 10 minutes stir and mash and continue to bake for another 10 minutes. Total of 30 minutes
