The Secret: Only Two Ingredients
Amy’s chocolate mousse comes together with just two simple ingredients: chocolate and cream. The secret lies in the preparation — combining a decadent ganache with freshly whipped cream for a texture that’s airy and indulgent.

- Crushed pistachios
- Flaky Sea Salt
- Fresh raspberries

Then, drizzle with flavor! Amy loves using French Monin syrups or a hint of infused olive oil—rosemary or orange for a subtle, elevated finish.
Tableside Chocolate Mousse Recipe
For the Ganache
- 5 cups semi-sweet or dark chocolate chips
- 3 cups heavy cream
- Place chocolate in a medium-sized bowl. Heat cream over medium heat, until hot, bubbling around the edges, but not boiling. Pour over cream and let it sit for a couple of minutes. Stir until smooth and set aside to cool.
For the Whipped Cream
- 5 cups heavy cream
- With an electric mixer, beat heavy cream to soft peaks.
Mousse Assembly
- Spoon about ¼ of the whipped cream onto the ganache, and stir in to lighten.
- Gently fold in remaining cream, and pour into large serving dish. Spread to even top, cover and refrigerate for at least two to four hours before serving. Can be made up to 2 days ahead.
