Mango Chicken Salad

Your rotisserie chicken doesn’t just go for soup. Toss it in a fresh salad for spring!

Mango Chicken Salad
1 bunch spinach; washed, dried, and torn into bite-size pieces
1/2 head of iceberg lettuce, torn into bite-size pieces
1/2 cup thinly sliced cucumbers, with skin on
2 mangoes; peeled, pitted, and diced
1/2 cup thinly sliced red onion
3 cups cooked chicken, shredded
Poppy Seed Dressing (recipe follows)

1. In a bowl, mix spinach, lettuce, mushrooms, cucumbers, mangoes, and red onion.
2. Add chicken and toss.
3. When ready to serve, pour dressing over salad and toss.

Serves 12

Poppy Seed Dressing
1 Tbls. poppy seeds
1/2 cup white wine vinegar
1 cup canola oil
1/2 cup granulated sugar
1/2 medium white onion, chopped
1 tsp. salt
1/2 tsp. dry mustard

1. Place all ingredients in a a blender and puree.
2. Store in covered jar in refrigerator until ready to use.
