Mascarpone with Chocolate and Crunch


1 cup amaretti cookies (finely chopped)
1/4 cup rum
4 egg yolks
1/2 cup sugar
1/2 tsp almond extract
1/4 cup cocoa
8 oz Mascarpone Cheese
1/4 cup Marsala wine

Topping
1/2 cup whipped cream
1/4 cup toasted almonds (sliced)


Spread out cookies onto a sheet of wated paper. Sprinkle with rum and coat cookies evenly. Set aside. In a large mixing bowl whisk eggs yolks and sugar until light and fluffy. Pour into a saucepan using a double boiler. Whisk until stiffened. As you whisk add the almond extract, cocoa and mascarpone cheese. Beat until smooth. Slowly add the wine until mixture thickens. Remove from heat and place in fridge to chill for 30 minutes.

To assemble: Place half of cookie mixture to bottom of a large bowl. Blend in masacrapone mixture and then the remaining cookie mixture. Top with whipped cream and toasted almonds.
