Mom’s Ham n Cheese Macaroni Salad

Easy to remember, even easier to make, those are the recipes that get
handed down from generation to generation. Try this family favorite
from Beck Low. It’s so easy it’s worth knowing by heart.
Mom’s Ingredients for 12-14:
4 cups uncooked macaroni (about 1 pound)
1 pound ham, diced
1 pound cheese, diced
1 cucumber, seeded and diced
1/2 bell pepper, chopped (more or less to taste)
1 bunch sliced green onions or snipped fresh chives
1/2 cup fresh or frozen green peas
1 cup salad dressing (more or less to taste)
1-3 tablespoons milk
Salt and pepper to taste

Cook macaroni according to package directions. Drain, rinse in cold water and drain
thoroughly. Combine macaroni with diced ham and cheese; peel and chop cucumber, chop
or grate bell pepper, snipped chives. Thin Miracle Whip with a little milk, add enough
dressing for desired consistency and moistness, salt and pepper to taste. Chill to blend
flavors.

Notes:
For picnics and family gatherings Mom would make this favorite salad. She would adjust
ingredients to what she had on hand and her taste preferences that day. She always had
chives growing near the house and, much to my dismay, would add a big bunch of snipped
chives to the mix – or grated onion in the winter. This recipe has always been a family
favorite (for me, without the chives – although I do add chives for nostalgia or garnish).
Even cousins say this is the salad they best remember my Mom for. Mom never had the
recipe written down – she always added ingredients until it looked good, or tasted right. I
standardized the recipe ingredients below.
