Chicken Chipotle Meatballs
2 lb ground chicken
¼ cup tomato paste
4 cloves garlic, minced
1 cup finely chopped onion
2 eggs, beaten
½ cup plain bread crumbs
1 ½ tsp kosher salt
2 finely chopped chiptole chiles in adobo
2 tsp adobo sauce
1 ½ tsp chili powder
3 tsp ground cumin
2 tsp ground coriander
½ cup finely chopped cilantro


1. Combine all ingredients in a large bowl and mix well. Use a cookie scoop to portion out mixture and roll into balls. Freeze or cook.


2. To sauté, heat 2 tsp canola oil in a large skillet over medium heat, add meatballs taking care not to overcrowd the pan. Turn frequently to brown on all sides and cook through, about 8 to 10 min.


3. To bake, heat oven to 350ºF. Line a baking sheet with foil and add meatballs, cook small meatballs about 25 minutes.


Serve these with rice and salsa verde, in a tortilla with taco fixings, on nachos, rolled in enchiladas, dipped in spicy cheese sauce or added to tortilla soup.

Spicy Maple-Bacon Drumsticks
12 skinless chicken drumsticks
12 strips bacon
½ cup pure maple syrup
1 tsp Tabasco sauce
½ tsp kosher salt


1. Heat oven to 400ºF. Wrap the tops of each drumstick with a strip of bacon. Place chicken on a foil-lined baking sheet.


2. Mix together the maple syrup, Tabasco and salt and drizzle half of the mixture over chicken. Roast until the bacon is golden, about 40 min. Drizzle remaining maple sauce over chicken before serving.

Chicken-and-Rice Lettuce Wraps
2 cups cooked basmati rice
½ cup chopped walnuts
1/3 cup dried currants
1 shallot, minced
1 scallion, white and green parts sliced
5 kalamata olives, minced
1½ cups shredded cooked chicken
1 tbsp red wine vinegar
¼ tsp kosher salt
½ tsp lemon zest
1 tsp honey
2 tbsp olive oil
¼ cup chopped flat-leaf parsley
Butter lettuce leaves


1. Mix together the rice, walnuts, currants, shallot, scallion, olives and shredded chicken.


2. In another bowl whisk together the vinegar, salt, lemon zest, honey, olive oil and parsley. Toss vinaigrette with the rice mixture and serve in butter lettuce leaves.

Chicken in Paper
4 small boneless, skinless chicken breasts
1/3 cup finely chopped flat-leaf parsley
1 clove garlic, minced
Zest of 1 lemon
¾ tsp kosher salt
¼ tsp red-pepper flakes
1/3 cup golden raisins
3 tbsp pine nuts, toasted


1. Heat oven to 400ºF. Place each chicken breast between two sheets of plastic wrap and pound to an even ½-thickness. Prepare four 20-by-30-inch pieces of parchment: fold in half and cut into a half-heart shape. Unfold and place chicken on one side of each paper.


2. In a bowl combine parsley, garlic, zest, salt and red-pepper flakes. Divide mixture among chicken breasts, covering the surface of each piece. Sprinkle with raisins and nuts.


3. Fold parchment over chicken breasts and pleat in 1-inch increments, folding edges over tightly to seal packet. Fold the last pleat underneath the packet. Place packets on a baking sheet; bake until packets are puffed and chicken is cooked through, 15 min.


4. Carefully transfer packets to plates, cut the paper across the top and tear to open.

Sweet and Spicy Bacon Chicken Sandwiches
4 boneless chicken breast halves, cut in half horizontally
Garlic salt and ground black pepper
4 slices Havarti cheese
8 slices country white bread, toasted
4 tbsp mayonnaise
4 tbsp pepper jelly
8 slices cooked bacon
2 cups baby arugula


1. Heat grill, or grill pan to medium high. Pound chicken to create thin cutlets about ¼ inch thick. Season with garlic salt and pepper and grill until cooked through, 4 to 6 min. Place one cheese slice on top of each cutlet to melt.


2. To make each sandwich, spread one piece of toast with mayonnaise and one piece with a generous layer of pepper jelly. Fill with chicken, bacon and arugula.
