New Orleans Special
1 package Zatarain’s Black Beans and Rice, prepared following package directions
8 corn tortillas
8 slices cheddar or pepper jack cheese
1 gold pepper, finely diced
2 tomatoes, finely diced
1 bunch cilantro, minced (I use the whole bunch, start with adding only about ¼ cup, add more to taste – it can be over powering if you’re not used to it!)
1 green onion, minced
3 Tbl rice vinegar, or more to taste
1 (14oz) can small red beans, drained and rinsed
Salt and pepper to taste
Combine all salsa ingredients together in a large bowl. Set aside. When beans and rice are prepared, top each
tortilla with slice of cheese, microwave each for about 30 seconds – until cheese is melted, spoon aprox ½ cup of rice
mixture over cheese and top with a large spoonfuls of fresh salsa. Serve with chips and enjoy the amazing flavors!!
This is a perfect dish for summer!!! Light and colorful! You can add meat if you want. Shredded cooked
chicken or thinly sliced steak would be delicious on the tortillas with the beans and rice. But I prefer it just like this.
