Old Fashioned Tapioca Pudding
2 egg whites (You’ll use the yolks also, so save them)
12 Tbsp. sugar, divided
6 Tbsp MINUTE Tapioca
4 cups milk
2 egg yolks
2 tsp. vanilla
Mix tapioca, 6 Tbsp sugar, milk and egg yolks in large saucepan. Let stand 5 minutes.
Meanwhile, Beat egg whites in medium bowl with electric mixer until foamy. Gradually add remaining 6 Tbsp. sugar, beating just until soft peaks form. Set aside and go back to tapioca mixture.
Cook tapioca mixture on medium heat, stirring frequently, until mixture comes to full boil (a boil that doesn’t stop bubbling when stirred). Remove from heat. Quickly stir in egg white mixture until well blended. Stir in vanilla.
Pour into individual size bowls. Serve warm or chilled. Great with a garnish of whipping cream or a small scoop of vanilla ice cream. Makes 6 servings
