Pear and Apricot Salad
2 handfuls mixed spring greens
1 asian pear, julienned
½ fennel bulb, shaved thin
6 dried apricots, sliced thin
2 T. goat cheese
3 chives or green onions, sliced thin
Place a small handful of greens on each plate. Top with pear, fennel, apricots, goat cheese and chives. Dress the salad with a Citrus Vinaigrette and enjoy! Serves 4.
