Pizza Quiche


1 can (13.8 oz.) refrigerated pizza dough
1/2 cup cooked sausage, ham, pepperoni or other meat * (~ 4 oz)
1 can (4 oz.) sliced mushrooms, drained *
1/2 bell pepper, thinly sliced or chopped *
1/4 red onion, thinly sliced or chopped *
1 Roma tomato, seeded, diced *
2 cups shredded part-skim Mozzarella cheese
2/3 cup half and half or whole milk
1/2 cup non-fat sour cream
4 eggs
1/2 teaspoon salt or to taste
Black pepper to taste
Cornmeal, optional
Fresh parsley, optional


Preheat oven to 4000 F.

Sprinkle 10×15-inch jelly roll pan with cornmeal, if desired. Press pizza dough into bottom of pan and up sides. Arrange ham, mushrooms, bell pepper, red onion, and tomato over crust. Sprinkle with cheese.

Beat together half and half, sour cream, eggs, and salt. Pour over pizza crust. Garnish with optional snipped fresh parsley. Bake for approximately 20 minutes or until center of quiche is set and top begins to brown.
