Pumpkin Pie Squares

Try a new take on pumpkin pie. Serve lighter, fluffier, mini pumpkin squares !
Pumpkin Pie Squares
2 c. cooked or canned pumpkin
2 c. sugar

2 t. cinnamon
2 t. nutmeg
2 t. ground ginger
2 t. salt
6 eggs
2 c. heavy cream or evaporated cream

Prepare graham cracker crust and while it is baking, prepare the pumpkin mixture. Mix sugar with spices, add pumpkin and stir well. Add eggs one at a time, whisking to blend. Slowly whisk in cream until all is incorporated.

Gently pour on to hot crust and return to oven. Bake for 1 hour or until a knife inserted in the middle comes out clean.

Cool and serve with whipped cream.
Graham Cracker Crust for 9″ x 13″ pie.
2 Packs graham crackers
1/2 c. sugar
2/3 c. butter (melted)

Crush graham crackers in a zippered bag or crumble into food processor. Add sugar and mix well. Slowly add melted butter and mix until moistened. Press into a 9″ x 13″ pan, press as far up the sides of the pan as possible and bake at 350 degrees for 10 min. before adding pie filling. To use as a crust to add prepared fillings such as pudding, thickened fruit etc., bake for 15 min. and cool. Add fillings.

Flour Pie Crust for 9″ x 13″

2 c. flour
1 c. butter
1/2 c. Powdered Sugar

Mix flour and powdered sugar in a mixing bowl. Cut the butter into the flour mixture until it resembles course cornmeal. Press into glass 9″ x 13″, press as far up the sides of the pan as possible and bake for 20 min. in a 350 degree oven for a baked pie before adding filling. Add filling. Return to the oven for the recommended baking time. To use as a crust to add prepared fillings such as pudding, thickened fruit etc., bake for 25 min. and cool. Add fillings.
Frozen Pie Crust


Defrost two frozen pie crusts, press into a square glass 9″ x 13″ pan. Press up the sides of the pan as far as possible. Bake in a 350 degree oven for 10 min. before adding pie filling. Return pie and bake for recommended time. To use as a crust to add prepared fillings such as pudding, thickened fruit etc., be sure to prick the bottom of the pie to minimize shrinking. Bake for 25 min. and cool. Add fillings.
Crescent Roll Pie Crust


Purchase and use the crescent roll can without perforations. If it has perforations, press it into the pan, then push the perforations together to eliminate the tear lines. Press the dough up the sides as far as possible. Bake for in a 350 degree oven for 10 min. before adding the pie filling. Return to oven and bake according to pie directions. To use as a crust to add prepared fillings such as pudding, thickened fruit etc., be sure to prick the bottom with a fork to minimize shrinking. Bake for 15 min. and cool. Add fillings.
