Raspberry Bars from “The Lion House”

Lion House Restaurant
1 ¼ Cups Flour
1 Teaspoon Baking Powder
Pinch of Salt
3 Tablespoons Packed Brown Sugar
½ Cup Butter or Margarine
1 Cup (4 ounces) Grated Cheddar Cheese
1 Cup Raspberry Jam
½ Cup Chopped Walnuts or Almonds


Preheat oven to 350 degrees. In a medium bowl, combine flour, baking powder, salt, and brown sugar, but in butter or margarine with a pastry blender or fork until mixture resembles course crumbs. Stir in cheese. Remove ¾ cup of the mixture. Press remaining mixture evenly in the bottom of an ungreased 8×8 inch pan. Spread jam evenly over crust. Sprinkle on nuts then remaining crumb mixture. Press down gently. Bake 25 minutes or until golden brown. Cool in pan and cut into bars. Makes 12 bars
Warm Orange Almond Drink
3 Cups Sugar
4 Cups Water
1 12-ounce Can Frozen Orange Juice Concentrate
1 ½ Cups Lemon Juice
1 Tablespoon Almond Extract
2 Teaspoons Vanilla
¼ Teaspoon Each Ground Cloves, Allspice, and Cinnamon (optional)
4 Quarts Water


Heat sugar and 4 cups water in a large pot over medium heat. Stir in remaining ingredients and heat until hot but not boiling. Serve warm. Leftover Beverage can be cooled and stored in the refrigerator for ten days. Makes 48 half-cup servings.
