Salmon with Black Bean Salsa


2 6-ounce salmon filets, boneless and skinless
salt and pepper to taste
2 tablespoons olive oil
1 jalapeno, seeded, ribbed, and finely diced
2 tablespoons red onion, chopped
1 small tomato, diced
2 tablespoon, roasted red pepper, chopped
1 clove garlic, roasted and diced
¼ teaspoon cumin
pinch of salt
1 cup black beans, drained
2 tablespoons cilantro, chopped


Season the filets with salt and pepper to taste and cook over medium high heat in olive oil for 3 minutes on each side. Remove the filets from the pan and set aside. In the same pan cook the jalapeno, red onion, tomato, red pepper, garlic, cumin and salt for 90 seconds. Add the beans and the cilantro and cook until hot.

Place the salmon filets on serving plates and top with the salsa
