Sandwich Spreads Wednesday

Homemade Mayonaise
1 egg at room temperature
1/2 tsp salt
1 cup extra virgin olive oil
1 tsp white wine vinegar
1 tsp Dijon mustard
2 tsp fresh lemon juice

In a blender, combine egg, salt, and 1 tsp of the oil.

Blend at the lowest speed for about 1 minute.
With the blender still running, add remaining oil in a slow thin stream until it is thoroughly blended.
In a small bowl, mix together mayonnaise with vinegar, mustard, and lemon juice.
May be used immediately, or cover and refrigerate for up to 4 or 5 days.

Makes about 1 1/2 cups
Lemon Artichoke Sandwich Dressing:
3/4 cups marinated artichokes
1/2 of 1 lemon, juiced
1/2 tsp minced garlic
1/4 cup freshly grated Parmesan cheese
2 tbsp sour cream
Sea salt
Fresh cracked pepper

In a food processor purée artichokes, garlic, and lemon juice until smooth.

Add grated cheese, and sour cream. Blend until smooth.

Season with salt and pepper to taste. Cover and refrigerate until ready to serve.

Suggested Sandwich:

Ciabatta bread, lightly toasted
Thinly sliced deli Lemon Pepper Chicken
Sliced Feta cheese
Sliced Tomatoes
Lettuce
Lemon Artichoke Sandwich Dressing
Roasted Tomato and Bleu Cheese Sandwich Dressing:
4 oz cream cheese, at room temperature
3.5 oz prepared Roasted Tomato and Bleu Cheese Pesto, (M.C. Rossi) or any other desired pesto
2 tbsp sour cream
Juice of 1/2 -1 lemon


n a food processor, blend together cream cheese and lemon juice.

Add pesto and sour cream. Blend until smooth. Add additional lemon juice if desired. Cover and refrigerate until ready to use.

Makes about 1 1/2 cups

Thinly sliced Deli Italian Seasoned Roast beef
Provolone cheese
Tomatoes
Lettuce
Roasted Tomato and Bleu Cheese Sandwich Dressing
Sweet Pineapple Mango Sandwich Dressing:
1/2 ripe mango, peeled, and chopped
1/2 lime, juiced
1 tbsp red onion chopped
2 tbsp pineapple preserves
2 tbsp snipped cilantro leaves
1 5.3 oz container Honey Greek Yogurt

In a food processor, purée mangos until smooth.

Add lime juice, onion, and preserves. Pulse until smooth.

Add yogurt and repeat. Stir in cilantro leaves. Cover and refrigerate until ready to use.

Kaiser Rolls
Thinly sliced, deli Tavern Ham
Grilled Pineapple
Swiss Cheese
Lettuce
Sweet Pineapple Mango Sandwich Dressing
