Sausage & Chicken Jambalaya

Sausage & Chicken Jambalaya
½ cup extra virgin olive oil
½ cup celery, chopped
½ onion, chopped
1 cup fresh mushrooms, sliced
¼ tablespoon salt
¼ tablespoon cayenne pepper
1 tablespoon minced garlic
½ cup green onions, chopped
½ pound boneless chicken breasts, cut into bite-size pieces
½ pound smoked sausage, cut into bite-size pieces
2 cups rice, cooked with chicken broth instead of water


1. Heat the olive oil in a large pot. Sauté the celery, onion, mushrooms, salt, and cayenne pepper for 15 minutes, stirring occasionally.

2. Stir in garlic, green onions, chicken, and sausage. Cook for 15 minutes or until chicken is done.

3. Add cooked rice and mix well.
