Southwestern Pork Wraps
2-3 pound boneless pork loin roast
3 cans (4 ounces each) chopped green chilies
1 can (8 ounces) tomato sauce
2/3 cup barbecue sauce
1 large sweet onion, thinly sliced
1/4 cup chili powder
1 teaspoon cumin
1 teaspoon oregano
Tortillas
Place roast in a greased 3 1/2 – 4 quart slow cooker.
In a separate bowl, combine all other ingredients except tortillas and spread over roast. Cover and cook on low heat 8-10 hours or on high heat 4-5 hours.
When done, shred meat with two forks and serve wrapped in tortillas. Garnish with fresh tomatoes, green leaf lettuce, and a dollop of sour cream.
